Pork Rib with Mayonnaise & Avocado Sauce with chef Nguyen Van Tuan from Fortuna Hotel in Ha Noi
Vietnamese chef Nguyen Van Tuan from the Chinese Kitchen of Fortuna Hotel has won third prize in a Hellman’s cooking competition, “Transforming Your Dish into a Masterpiece”. This week, he reveals his award-winning recipe: Pork Ribs with Mayonnaise&Avocado Sauce, which brings together a wonderful blend of flavours and textures.
Ingredients:
Pork ribs: 300g
Mayonnaise: 200g
Condensed milk: 2tsp
Red cabbage, julienned: 50g
Coffee powder: 50g
Chicken powder: 10g
Carrot, julienned: 50g
Parsley: 10g
Strawberry, sliced: 10g
Cornstarch powder:10g
Salt: 10g
Sugar: 10g
Avocado: 1
Preparation:
Cut ribs into 3cm pieces, marinate with salt and chicken powder for 10 minutes. Bake at 150oC for three minutes on both side.
Mayonnaise sauce: grind avocado, mix with 3tsp of Mayonnaise and 2tsp of condensed milk.
Coffee sauce: stir 50g coffee powder with 0.2 liter of water, 1tsp of chicken powder and 1tsp of sugar. Boil this mixture. In another bowl, stir cornstarch powder with water to make it sticky, then pour into the boiling mixture until it becomes thicker. Allow it to cool.
Place the baked ribs on a plate, decorate with red cabbage, carrots and strawberries.
Pour Mayonnaise sauce and coffee sauce in separate small bowls and serve with the ribs.
Dip the ribs in the sauces freely.
Chef’s tip:
Baked ribs have the bright colour of medium cooked pork, flavoured with avocado it has a deliciously buttery taste.
